A Cup of Coffee Cake (in Under Five Minutes)

Ingredients:

Coffee mug (preferably smaller)

1 tablespoon butter (soft, not melted)

2 tablespoons sugar

1 Egg (optional)

2 tablespoons sour cream

Few droplets of vanilla extract

1/4 cup flour

1/8 teaspoon baking powder

Put softened butter in mug.

Stir in 2 tablespoons of sugar until fluffy and creamy, about 30 seconds.

Add egg. Egg is optional, without egg the result is more crumbly and less cake like. Also, an egg works just fine.

Stir in 2 tablespoons of sour cream.

Add droplets of vanilla; be conservative when pouring.

Stir in cup 1/4 flour and 1/8 teaspoon baking powder

Add crumb topping

Microwave. Start with 1 minute, then do 10 seconds until it’s done to your liking.

Will be very hot when you first take it out of the microwave.

Let cool slightly then dig in!



Crumb topping:

1 tablespoon butter

2 tablespoons flour

1 tabblespoon brown sugar

1 teaspoon cinnamon

Mix together all ingredients in bowl.
