Chef Brian Shore from Club Sushi and Steak at Mohegan Manor (in Baldwinsville) stopped by to make sushi.

Chefs Sea Bass Roll
3 ounces of prepared sushi rice
1 ounces spicy crab salad
4 pieces of thinly sliced cucumber
1 ounce fresh tuna
1 nori sheet
2 ounces thinly sliced sea bass

Topping sauce:
1/2 cup mayonnaise
2 tablespoons of soy sauce
1 tablespoon Asian hot spice
1 tablespoon black and white sesame seeds

Roll out the prepared rice onto the nori sheet.  Combine the spicy crab salad with the cucumber and tuna.  Place the mixture evenly on the rice. Roll the rice over the mixture to create the sushi roll, and top with the sea bass and the topping sauce. Compliment with wonton chips, pickled Ginger and wasabi paste.
