Chef John from Syracuse's 1060 Restaurant shared his recipe for a Grilled Salmon B.L.T. with Avocado Lime Mayonnaise. Enjoy!
4 Each-5 oz Salmon Filet Cuts (Butterflied thin)
As Needed- XV Olive Oil
To Taste-Salt and Pepper
8 Each- Slices of Multigrain Bread
4 Each- Fresh slices Leaf Lettuce
8 Each- Slices of Vine Ripe Tomatoes
12 Each- Slices of Applewood Bacon (pre-cooked and drained)
3/4 Cup- Avocado Lime Mayonnaise (1 Avocado, 5 oz Mayo, Juice of 1/2 Lime, Dash of Tabasco, Pinch of Salt mashed together)
Method:
Rub each piece of salmon with olive oil and season each side with salt and pepper
On hot char-grill, place salmon and bread down. Toast bread on each side and reserve.
Mark salmon in a criss-cross fashion for 2-3 minutes on each side until inside is about medium.
Take avocado-lime mayo and spread all evenly onto the 8 pieces of toasted bread. Reserve 4 pieces of bread and begin to build you 4 sandwiches, starting with lettuce, tomato, salmon and 3 pieces of bacon on each one.
Place 4 pieces of bread on top.
Dig in!
