Jerk-Rubbed Chicken with Banana-Scallion Mashed Potatoes

INGREDIENTS:
8 oz seared chicken with jerk spice (you can purchase this at Wegmans - just rub the chicken before cooking)
MASHED POTATO INGREDIENTS:
11/2 cup of mashed potato
tsp of brown sugar,
1/4 oz scallions
1/2 cup banana,
4 tbs of heavy cream,
1 tbs of butter and salt and pepper to taste
RUM SAUCE INGREDIENTS:
1/4 cup heavy cream
1/2 oz Meyers rum
1 tsp fresh cilantro
1/2 tsp fresh ginger chopped
METHOD:
Make regular mashed potaotes, and add the remaining ingredients. Mix all of the ingredients listed for the rum sauce, saute and reduce down. Cook the chicken and place on top of the potatoes. Top all with the rum sauce, and garnish the plate with some snow peas. Enjoy!
