Pork Chops Pizzaiolla

Ingredients:

8 oz. pork chop

¼ cup of olive oil

3-4 pieces of one whole garlic glove

½ of a white onion

3-4 slices of mushrooms

1-2 sweet peppers (cut up)

½ cup of beef stock

½ cup of tomato sauce

¼ cup of red wine

¼ cup of mozzarella

Sauté the pork chop in olive oil until it is brown on both sides ( 4 minutes each side). Season the pork chop to taste. Then add the mushrooms, onions, peppers, and garlic to the pan. Sauté the vegetables for 3-4 minutes and add the stock, wine, and tomato sauce. Salt and pepper to taste. Let the sauce simmer as the chop cooks for five minutes on each side or until the liquid is half dissolved. Add cheese to the top of the pork chop and turn the gas off. Then cover the pan until the cheese melts. Serve over the vegetables and sauce.
