Shrimp and Chicken Ala Maria

Mike DeSalis fron Santangelo's Restaurant was here Friday teaching us how to cook Shrimp and Chicken Ala Maria.  Here is the recipe:

Shrimp & Chicken Ala Maria

1/2 lb pre cooked pasta
4 boneless chicken breasts, approx 4 oz each
16 raw shrimp, peeled and deveined
1 cup sliced mushrooms
8 artichoke hearts, cut in half
1 cup stewed tomatoes, chopped
1 cup flour
1 tsp granulated garlic
1/2 tsp ground pepper
1/2 tsp salt
1/2 tsp basil
1/4 cup vegetable oil
1 cup chicken stock
2 Tb butter
1 cup Marsala Wine
1 cup shredded mozzarella

Lightly flour shrimp & chicken. Cook Chicken half way with a little olive oil. Sautee garlic until lightly browned. Add artichoke hearts, mushrooms, 1 tsp butter and spices. Add chicken stock and shrimp and cook until shrimp is fully cooked. Add stew tomatoes and marsala wine. Cook until the alcohol is cooked off of the wine. In separate pan cook remaining butter and flour. Add to main dish and cook it all until it thickens. Simmer and place over pasta of choice. Top with mozzarella and bake or broil a couple of minutes until cheese is melted and serve.
