Sicilian Rigatoni
1/3 cup Blanched Rapini
1/3 cup Roasted Grape Tomatoes (cook with olive oil, garlic, salt, pepper, and basil until wilted)
1/3 cup ground Veal
1/3 cup ground cooked medium Italian sausage
1 tablespoon Garlic
1 tablespoon Shallots
Pinch Black Pepper
Pinch Kosher Salt
1 ½ cup Marinara
¼ cup Grated Romano Cheese
2 tablespoon Ricotta
1 splash heavy cream for color
Toss in 60 oz Rigatoni
Sautee garlic & Shallots with 2 tablespoons olive oil, add cooked sausage and veal and marinara sauce. Season with salt & pepper then simmer. Add Roasted tomatoes and cooked Rapini. Fold in 2 tablespoons Ricotta and a splash of heavy cream. Toss with cooked Rigatoni’s and Romano Cheese.
