Sortiris Taverna's Desiree's Delight

Sortiris Taverna was here again today to cook up a traditional Greek dish from their menu.  Chuck Capousis shared the pasta recipe Desiree’s Delight!

Desiree’s Delight

5 oz dry Champanelle Pasta (cooked)
3 oz fresh Baby Spinach
2 oz Sundried tomatoes dried julienne
3 oz Feta, crumbles
6 oz Chicken or Vegetable Stock
2 oz Olive Oil
1/3 tsp Salt
1/3 tsp Black pepper
1 clove garlic, chopped
2/3 cup White Wine
2 tblsp Butter
2 tblsp Grated Cheese (Kefalograveria or Parmesan)
Parsley, Fresh Chopped

In a heated skillet add extra virgin olive oil and butter, heat until butter is melted.  Add garlic and sundried tomatoes, let cook one minute.  Add chicken or vegetable stock, the add pasta (pre-cooked) to the pan.  Blend into the mixture.  Add feta, grated cheese, blend into pasta, add fresh spinach then blend with pasta.  Sautee spinach until wilted.  Transfer to a plate, garnish with grated cheese and fresh chopped parsley. 

Sortiris Taverna is an authentic Greek restaurant located in Jamesville.  Their hours are Monday-Wedensday 11 am- 10 pm and Thursday-Saturday 11 am- Midnight, Sunday they are open 11 am-8 pm.  For more information visit their website here.
