Tortellini Boscaiola

Fabio from Fabio's Italian Restaurant in Cortland stopped by to make one of his most popular dishes, and he's sharing the recipe, too!

Tortellini Boscaiola


1 lb tortellini
1 tbsp butter
4 oz onions
10 oz fresh mushrooms
8 oz sweet baby peas
4 oz white wine
8 oz ham
1 cup heavy cream
salt
pepper
grated Parmigiano Reggiano cheese

Bring salted water to boil in a large pot to cook the tortellini. Meanwhile, cut the ham into small strips, and slice the mushrooms. In a heavy bottomed saucepan saute the onions with the butter and cook until a nice golden color is achieved. Next, add the sliced mushrooms and the peas and cook them on medium heat for 3-4 minutes. Next, add salt and pepper to taste and pour in the wine. Let this cook for 1-2 minutes, then drain the tortellini and put them in the pan with the mushroom and peas, then add the ham and the cream. Finally cook for 3-4 more minutes, check your seasoning, sprinkle grated Parmigiano Reggiano cheese on top and serve hot... Tortellini Boscaiola Done!
