1060 Grilled Flatbread Pizza
You will need:
1, 6-8 inch flatbread or “pocketless” pita bread
2 tbsp of extra virgin olive oil
Salt and pepper to taste
20 baby spinach leaves (stems removed)
1 average sized “ripe” plum tomato, medium diced
4 large basil leaves (finely slicked thin)
1/3 cup of crumbled feta cheese
2 tbsp of extra virgin olive oil
First, turn you outdoor char-grill on high and your oven on 450 degrees. With a pastry brush or gloved hands, spread olive oil all over the surface of the flatbread. Season with salt and pepper and place it on a very clean hot char-grill. Mark the bread in a “criss-cross” fashion, only cooking for about 10 seconds with each mark. Flip the bread over and repeat steps on the other side (please note that it is very easy to burn this bread, so be careful to only brown the bread to get it crispy and obtain nice grill marks).
Next, remove the flatbread from the grill and place it on a properly sized “cookie sheet” or baking pan. Sprinkle the spinach, basil, plum tomatoes, and feta evenly all over the top of the bread. Sprinkle a little more salt and pepper over the top and place the pan in your pre-heated oven. Bake at 450 degrees for 5-7 minutes. (Please note that you will not see the feta cheese melt all that much because it is a lower fat cheese and does not contain very much moisture).
Next, remove the pizza from the oven and cut it into 4 or 6 pieces, Enjoy!
