Asian Salmon Burgers and Cedar Plank Salmon

Asian BBQ Salmon Burger

1/2   seedless cucumber, peeled. thinly sliced
1   green onion, thinly sliced
1/2   Tbsp Wegmans Rice Vinegar
4   Ready to Cook Salmon Burgers
1/4   cup Wegmans Asian Style BBQ Sauce
4   Leaves green leaf lettuce

Preheat grill on HIGH 10 min.

1.Toss cucumber, onion, and rice vinegar in large bowl. Drain, discarding liquid. Chill veggies, covered, until ready to serve, at least 30 min and up to 3 hours.
 
2.When ready to serve: Clean grill with wire brush. Using soft cloth, coat grill grate lightly with vegetable oil. Place burgers on grill; reduce heat to MEDIUM. Brush top of burgers with barbecue sauce.
 
3.Sear burgers on grill 2 min, until they have changed color about one-quarter of way up from bottom. Turn over; brush with BBQ sauce. Sear 2-3 min. Turn again; reduce heat to MEDIUM or LOW. Close lid.
 
4.Cook about 8 min, until internal temp reaches 165 degrees. Check internal temp by inserting thermometer halfway into thickest part of burgers. Transfer to clean platter; set aside.
 
5.Arrange lettuce on plates; top with burger. Top with onion-cucumber mixture; serve.


Asian Fruit Slaw

1   pkg (12 oz) Food You Feel Good About Cleaned & Cut Asian Slaw
1/4   cup Wegmans Dry Roasted Sunflower Kernels
2   cups Food You Feel Good About Mango Chunks
2   green onions, thinly sliced
1   pkg (10 oz) Food You Feel Good About Fresh Pineapple Rings, cut into bite-size chunks
2   Tbsp Wegmans Reduced Sodium Soy Sauce
2   tsp Wegmans Rice Vinegar

Combine all ingredients in large bowl and serve immediately.


Cedar-Plank Salmon with Brown Sugar and Cracked Pepper Blend

4   salmon fillets (about 6 oz each), skinned
1   Tbsp dark brown sugar
1   Tbsp Wegmans Cracked Pepper Blend
4   Tbsp Wegmans Horseradish Cream Sauce

You'll Need: Cedar plank, soaked 1 hour in water

Preheat grill on HIGH 10 min.
1.Combine brown sugar and cracked pepper together in small bowl; mix well.

2.Clean grill with wire brush.
 
3.Arrange salmon on plank; rub brown sugar mixture evenly over fillets.
 
4.Place plank with salmon on grill; close cover. Reduce heat to MEDIUM; cook salmon 12-15 min, until internal temp reaches 130 degrees. Check by inserting thermometer halfway into thickest part of salmon. Remove from grill; let rest at least 2 min.
 
5.Top each fillet with 1 Tbsp horseradish cream sauce.
