Greens and Beans

Ingredients:
1 tablespoon of Olive oil
1 head of escarole
1 quart of chicken stock
1 teaspoon of chopped garlic
Pinch of crushed red pepper
1 can of cannellini beans
½ cup of Pecorino Romano cheese
Salt and pepper to taste
Cook the escarole until tender and strain. Then put the escarole aside. In a sauté pan, add the olive oil, garlic, and red pepper. When the garlic starts to cook, add the beans and escarole (the "greens"). Salt and pepper to taste. Stir for a minute or two and add half of the chicken stock and 1/4 cup of cheese. Simmer for 5 minutes. If the soup looks dry, add the rest of chicken stock. Enjoy!
