Big apple pork
Pork medallions smotherd in dolce honey sauce, served with sweet potato apple mash and seasonal vegetables.
shallots
6 oz of pork tenderloin
4 sweet potatos ( skin and boil)
1 apple ( diced skin on is fine)
1 egg
4 oz panko bread crumbs
1oz all purpose flower
16 oz of apple juice
2 tbls of chopped garlic
1oz of fresh chopped basil
1tsp of chopped shallots
1 cup of chopped crispy bacon
1/2 cup of honey
Bread your pork medallions in flower,egg and panko.
Boil your sweet potatos and diced apples until tender. then add seasoning of choice.
in sautee pan add oil then let the garlic shallots and basil come to a simmer and then add
your apple juice and honey.
In a large sautee pann with oil sear the medallion to a golden brown and finish in the oven for 3-5 min.
plate and enjoy.
