Gianni Vitale joined us on Bridge Street cooking Braised BBQ Pork Spareribs with Roasted Summer Vegetables, a signature Wegmans recipe.
Braised BBQ Spareribs:

Ingredients
1 rack Wegmans Center Cut Pork Spareribs (about 3 lbs), halved
1 Tbsp Wegmans Barbecue Seasoning
1 bottle (19 oz) Wegmans Memphis-Style BBQ Sauce
1 bottle (12 oz) lager-style beer
You'll Need: Braising pan, aluminum foil
Directions
Preheat grill on HIGH 10 min.
Preheat oven to 350 degrees.
1.Clean grill with wire brush. Using soft cloth, coat grill grate lightly with vegetable oil.
2.Season both sides of ribs with barbecue seasoning. Sear on grill 3-4 min per side; do not cook through. Transfer ribs to braising pan.
3.Whisk BBQ sauce and beer together in bowl until well-blended; pour over ribs in pan. Cover pan tightly with foil; place in oven.
4.Bake 2 1/2-3 hours. Carefully remove foil; bake 10 additional min.

1 (about 1 1/4 lbs) unpeeled eggplant, sliced in 1/2-inch rounds
1 (about 3/4 lb) zucchini, sliced diagonally in 1/2-inch rounds
1 (about 1/2 lb) sweet red pepper, halved, seeded, cut in 1/2-inch strips
2 Tbsp Wegmans Basting Oil
Directions
Preheat grill on MEDIUM 10 min.
1.Clean grill with wire brush. Using soft cloth, coat grill grate lightly with vegetable oil.
2.Drizzle eggplant, zucchini, and pepper with basting oil. Sear on both sides.
3.Grill, turning every 1-2 min, until both sides are grill-marked and vegetables are knife-tender, 10-12 min.
