shared his recipe for his "Almost Famous" Chocolate Chip Cookies - Enjoy!
¾ cup granulated sugar
1 cup brown sugar
1 cup salted butter (softened to room temp)
4 tsp real vanilla extract
2 ea large whole eggs (beaten)
3 cups AP flour
1 tsp baking soda
½ tsp salt
1 cup toasted almond (finely chopped)
3 ½ cup chocolate chips (semi-sweet) (very high end brand preferred)
Preheat your oven to 350 degrees. In a small electric mixer add the two sugars and the softened butter. With the paddle attachment, whip them together on speed 2 for one minute. Turn the mixer off and add vanilla and the beaten eggs. Place the mixer on speed one and mix for one more minute until everything is well incorporated. With any type of sifting instrument, sift together the flour, baking soda and salt into a bowl. On speed one, add the sifted dry ingredients very slowly into the wet mix until everything is together.
Take the bowl off of the mixer and add in your chopped almonds and chocolate chips by folding them into the batter with a rubber spatula or wooden spoon.
With a small ice cream scoop or a large kitchen spoon, evenly distribute the batter into 1 ½ inch balls onto a paper lined cookie sheet.
Bake for 11-13 minutes. Cool to room temp and enjoy!
