We were cooking with Wegmans again today and Chef Bob was here to share a few recipes that all include a fall favorite, squash!
Butternut Squash with Baby Spinach
2 pkgs (20 oz each) Food You Feel Good About Cleaned & Cut Butternut Squash, cut in 1-inch cubes
2 large red onions, peeled, chopped (about 4 cups)
3 Tbsp Wegmans Basting Oil
Wegmans Sea Salt and Cracked Black Pepper to taste
1 pkg (6 oz) Food You Feel Good About Fresh Baby Spinach
3/4 cup Food You Feel Good About Sweetened Dried Cranberries
Preheat oven to 350 degrees.
Combine squash and onions on large baking sheet; drizzle with basting oil. Season to taste with sea salt and pepper; toss lightly.
Roast 55 min, until tender and brown. Toss squash, spinach, and dried cranberries in large shallow serving dish.
Spaghetti Squash Gratin
1 spaghetti squash (2-3 lbs), halved, stem to blossom end, seeded
1 clove Food You Feel Good About Peeled Garlic, chopped
1 Tbsp chopped fresh thyme
2 Tbsp chopped fresh parsley
1/2 tsp salt
1/4 tsp coarsely ground pepper
1 pkg (8 oz) Vermont Butter & Cheese Creme Fraiche
3 oz shredded Asiago cheese (about 1 cup)
Preheat oven to 450 degrees.
Place squash, skin side up (one half at a time), on microwave-safe dish; cover with microwave-safe plastic wrap. Microwave on HIGH 10-12 min, until tender. Let rest covered 10-15 min, until cool enough to handle; carefully remove plastic wrap to avoid steam.
Run tines of fork lengthwise over cut surface of squash to loosen spaghetti-like strands; scoop out strands. If necessary, drain excess liquid. Set aside.
Combine garlic, thyme, parsley, salt, pepper, creme fraiche, and 2/3 cup cheese in small bowl. Fold into squash; place in shallow ovenproof casserole dish. Top with remaining cheese.
Bake 20 min or until lightly browned.
Roasted Acorn Squash with Pumpkin Seed Oil
1 pkg (20 oz) Food You Feel Good About Cleaned & Cut Acorn Squash, 1-inch dice
1 large Food You Feel Good About Peeled Shallot, 1/2-inch dice
Sea salt and fresh cracked pepper to taste
2 Tbsp Wegmans Pure Olive Oil
1 tsp Food You Feel Good About Pumpkin Seed Oil
Preheat oven to 450 degrees.
Season squash and shallot with salt and pepper to taste; toss with olive oil. Arrange in single layer on baking sheet. Roast 25-30 min, until squash is fork-tender.
Transfer to serving platter; drizzle with pumpkin seed oil.
