French Week: French Toast with Berry Puree

Berry French Toast

16   oz Food You Feel Good About Egg Busters, or about 8 large eggs
1/2   cup skim milk
1/4   tsp cinnamon
1   tsp vanilla extract
1-1/2   Tbsp granulated sugar
Wegmans No Stick Cooking Spray, butter flavor
6   slices slices Wegmans Honey Apple Oat Premium Bread, cut into 1/2
3   bananas, peeled and quartered
12   mint leaves


1.Whisk Egg Busters, milk, cinnamon, vanilla,and sugar in large bowl.
 
2.Coat nonstick pan with cooking spray, heat on MEDIUM. Dip bread quickly in egg mixture; place in pan and cook until golden brown on each side, 1-2 min per side.
 
3.Remove from pan and top each serving with 1/4 cup Berry Puree (see below), 1/4 sliced banana and 2 mint leaves.


Berry Puree

1   pint blueberries
1   pkg (16oz.) strawberries
1/4   cup Wegmans Triple Fruits Spread (Raspberry, Strawberry, Blackberry)
1/2   cup Food You Feel Good About 100% Apple Juice

Combine all ingredients in blender and puree, 1 1/2 - 2 min.
