Green Peppercorn Turkey Scaloppini

Green Peppercorn Turkey Scaloppini

Ingredients
4 turkey medallions (cut from a fresh turkey breast)
4 oz. Flour
4 oz. Extra Virgin Olive Oil
2 tsp unsalted butter
½ cup chopped white onions
1 oz. green peppercorns
2 tsp white wine vinegar
4 oz. White Wine
1 cup turkey or chicken stock
Chopped parsley
Salt and pepper

Directions
Turn your stove onto medium high to heat up a frying pan, then pour the olive oil and when hot, add the green peppercorns and the chopped onions.  Cook for a minute, then add the four turkey medallions which have been previously floured on both sides.
Cook for about 1 ½ minutes on each side and then add the vinegar and the white
wine. Cook for another minute, add your stock and salt and pepper.  Let it go for another minute and pull the turkey medallions out onto a serving plate and let the sauce reduce until velvety and creamy.  Pour over your turkey medallions, sprinkle with chopped parsley and serve.
