Grilled Brown Sugar BBQ Chicken Breast; Asparagus with Bearnaise Butter

Grilled Brown Sugar Barbecue Chicken Breasts

SERVES 4  

1 1/2   Tbsp Wegmans Barbecue Seasoning
1   Tbsp Wegmans Dark Brown Sugar
1   tsp salt
3   Tbsp Wegmans Basting Oil
4   Wegmans Boneless Skinless Chicken Breasts


  1. Mix barbecue seasoning, brown sugar, salt, and basting oil in large bowl. Add chicken, tossing to coat. Marinate, covered, 6-8 hours in refrigerator. 
     
  2. Preheat grill on MEDIUM-HIGH 10 min. Clean grill with wire brush. Using soft cloth, coat grill grate lightly with vegetable oil.
     
  3. Sear chicken on grill 2-3 min, until it has changed color one-quarter of the way up from bottom. Turn over; sear 2-3 min. Reduce heat to MEDIUM; close lid.
     
  4. Cook chicken 8-10 min, or until internal temp of chicken reaches 165 degrees; check by inserting thermometer halfway into thickest part of chicken. Transfer chicken to clean platter.

       Asparagus with Bearnaise Butter

    SERVES 8 -12 

    3   bunches (2 1/4 lbs) asparagus, ends trimmed
    3 1/2   oz Wegmans Bearnaise Finishing Butter (Dairy Dept)
    Salt and pepper to taste


    1. Blanch asparagus 2-3 min in large pot of boiling, salted water. Remove with tongs. Drain well.  
    2. Transfer asparagus to clean platter. Top with pats of butter; let butter melt. Season to taste with salt and pepper.
