12 oz. pork tenderloin
4 oz gorgonzola cheese
3 tsp extra virgin olive oil
2 tsp vinegar
6 oz tomato sauce
Pinch of salt
Pinch of pepper
Pinch of hot pepper
Pinch of parsley
Season the pork tenderloin with the extra virgin olive oil, salt, pepper and vinegar. Cook in a skillet until both sides are cooked. Put in an oven-safe dish, and top with the gorgonzola cheese, then cook in 350 degree oven for 4-5 minutes (just until the cheese is melted).
Meanwhile, in a skillet, get some extra virgin olive oil really hot. Then add the garlic and tomato sauce, and season with pepper, hot pepper, and parsley.
To serve, pour the sauce mixture over the pork. Enjoy!
