Pork Tacos
Ingredients:
+ leftover Italian-Style Slow-Roasted Pork Roast
+ 1 tsp Wegmans Pure Olive Oil
+ Wegmans Corn Tortillas
+ tomatoes, diced
+ Queso Fresco Cheese, grated
+ Cilantro, picked
+ Radishes, trimmed, sliced
+ Green onion, sliced
+ Food You Feel Good About Iceberg Lettuce, shredded
+ Vermont Butter & Cheese Company Creme Fraiche
+ Avocado, sliced (squeeze fresh lime over flesh)
+ Food You Feel Good About Roasted Tomato Salsa and Food You Feel Good About Roasted Salsa Verde limes, quartered
Directions:
1.Cut chilled roast into 1 1/2-inch slices; do not trim off fat.
2.Heat oil in large skillet on HIGH. Sear pork in batches being careful not to crowd pan, until crispy, about 3 min per side. (Caution: Watch out for spattering oil as pork sears.) Remove from pan. Keep each batch warm as you sear rest of pork.
3.Slice or pull apart pork into bite-size pieces. Place in bowl.
4.Using tongs, toast tortillas carefully over open flame or place in hot skillet until they just begin to brown.
5.Set out taco toppings.
