Slow-Cooked Hunter Style Chicken
Ingredients:
1 pkg Chicken Split Breasts with Ribs, Drums and Thighs (about 3 lbs)
Salt and pepper to taste
Wegmans Pan Searing Flour
2 Tbsp Wegmans Vegetable Oil
2 cloves Food You Feel Good About Peeled Garlic, minced
1 pkg (8 oz) Food You Feel Good About Cleaned & Cut Mirepoix
6 Tbsp all-purpose flour
2 cups dry red wine
1 carton (32 oz) Food You Feel Good About Chicken Culinary Stock
1 pkg (8 oz) Food You Feel Good About Cleaned & Cut Sliced White Mushrooms
1-1/2 cups Italian Classics Kitchen Cut Tomatoes with Basil
2 tsp Herbes de Provence
1 Tbsp chopped Food You Feel Good About Fresh tarragon
You'll Need a 6-8 qt slow cooker, large braising pan
Directions:
1. Season chicken with salt and pepper. Dust with pan-searing flour.
2. Heat oil on MEDIUM in large braising pan. Brown chicken pieces lightly on all sides, 8-10 min. Remove chicken; place in slow cooker. Discard all but 1 Tbsp oil.
3. Lower heat to MEDIUM-LOW. Add garlic and mirepoix to pan; cook 2-3 min, stirring frequently. Stir in all-purpose flour. Add wine; stir. Add stock; bring to simmer.
4. Pour stock mixture over chicken in cooker. Add mushrooms, tomatoes, and herbes; stir to mix.
5. Cover; cook on HIGH 3-4 hours or LOW 6-7 hours. Transfer chicken to serving platter. Stir tarragon into sauce; season to taste with salt and pepper. Pour sauce over chicken and serve.
