Spelt Risotto With Smoked Salmon & Prawns
Serves 4

1 Tbsp extra virgin olive oil
1 Tbsp butter
4 oz chopped onions
4 garlic cloves, chopped
4 oz sun dried tomatoes
4 oz smoked salmon
12 large prawn
8 oz spelt (farro)
8 oz of wine
Cream
Salt
Pepper
Dill
Parsley
Parmigiano Reggiano cheese

Pour the spelt (farro) in a pot with cold water with a pinch of salt, then start cooking on medium heat, stirring occasionally.  When the water comes to a boil, reduce the heat to maintain a simmer until the farro becomes soft but still al dente, more or less about 15 minutes.  Meanwhile in another pan, heat the olive oil and butter.  Sauté the garlic and onions, then add the prawns, sun dried tomatoes, salt and pepper and cook for one minute over medium heat.  At this point add the spelt that you have previously cooked and drained, reserving a little of the 'cooking water.  Add the wine, and cook for another minute.  Add the smoked salmon, dill, and a dash of cream and adjust salt and pepper to taste.  Cook for 2 or 3 minutes, adding a little of the cooking water to achieve a risotto that is creamy and fluffy but not soupy.  Finish with a drizzle of extra virgin olive oil, Parmigiano Reggiano cheese and parsley.  Spelt risotto done... enjoy!
