1 Tbsp Wegmans Pure Olive Oil
1 pkg (8oz) Food You Feel Good About Cleaned & Cut Chopped Onion
1 cup (4 oz) thinly sliced Food You Feel Good About Cleaned & Cut Leeks
1 cup (4 oz) thinly sliced celery
1 Tbsp chopped Food You Feel Good About Peeled Garlic bay leaves
Salt and pepper to taste
1 bag (2lbs) Food You Feel Good About Mussels
1 bottle (8 oz) Spicy Thai Red Curry Simmer Sauce (Produce Dept)
You will need: Braising pan
1. Heat oil in braising pan on medium. Add onion, leeks, celery, garlic, and bay leaves; season to taste with salt and pepper. Cook, stirring, 10 min, until soft but not browned.
2. Add mussels and curry sauce to pan; increase heat to medium-high. Cook, covered, until simmering and mussels open 3-5 min.
3. Remove lid; stir. Ladle into warmed bowls.
