In this Food for Thought, a veggie that's at its best right now: Peas.
They're most plentiful and most affordable right now, and they're also loaded with Vitamin C.
We found three types at the grocery store.
Sugar snaps are completely edible. The pods are as tender as the peas inside. Remember to remove the string before you cook or eat them. A half cup of raw snap peas has just 33 calories.
Snow peas are also completely edible and are even more supple than sugar snaps; snap off the tops, then pull the two seams down each side simultaneously.
English peas need shelling. To pop out the peas, snap off the top of each pod and slide the string down one side. Open the pod and pluck out the peas.
Once you get them home, put them in the fridge and use them in a day or two as crunchy snacks, in salads, or steam them with a little butter and salt.
