What happens to the butter sculpture after the Fair?
Syracuse (WSYR-TV) – The butter sculpture is a favorite among visitors to the Fair, but Fairgoers often wonder what happens to it when the fair is over?
Once the sculpture is dismantled, it is brought to OCRRA to be turned into compost.
Students at SUNY ESF will harvest and scrape the sculpture down.
In years past, the butter sculpture has been turned into biodiesel fuel for use in college vehicles.
But the biodiesel production facility is being upgraded at the moment so the butter will be sent to the compost pile.
