Why is the brick oven at Wegmans in the town of Dewitt being dismantled? Answer:
It's is an upgrade in technology according to spokeswoman Evelyn Carter.
She says Wegmans is replacing its brick ovens with MIWE deck ovens.
These can be programmed to allow for a more consistent product and for more than one type of product to be baked simultaneously.
